Homeaway, VRBO etc.

I am assisting to book a vacation to ST Thomas in November with friends. I have no experience with any of the booking sites. I am just looking for any helpful information. I already sent one email, and I guess I am dealing with a booking company , not the owner? I must read more about their process....

The decision has been made to go to Puerto Rico. We plan to arrive Thursday Nov 10th or Friday the 11th. Most of the group can only do a long weekend, and will fly out on Tuesday. How early is too early ?

We land at 7:30 am on St Thomas on Thursday. This puts us on island at 9:00 ish. How early is too early to get drink at the Beach Bar? I wonder what time they open? A celebratory breakfast mimosa seems like a good idea. :D
